Each month, Mohonk bartenders compete to create a specialty craft cocktail for the resort. They are given one key ingredient, or theme, which must be featured in their seasonal creations. December’s key ingredient was gingerbread! A select group of lucky Mohonk employees get to taste, discuss, and vote on the winning “Cocktail of the Month,” which can be enjoyed by guests in the Carriage Lounge among a variety of hyper-local draft beers and New York spirits.
Thai Gingerbread Iced Tea
Perfect if you are not quite ready to give up the warm weather but are in the holiday spirit!

1 1/2 oz Captain Morgan Rum
1/2 oz Vanilla Chai Vodka
1 oz Gingerbread Syrup
2 oz Iced Tea
1/2 oz Half & Half
Mix all ingredients except half & half.
Make sure to shake gingerbread syrup well before pouring.
Pour over ice into a highball glass and top with half & half, letting the drink layer on its own.
Garnish with a pinch of cinnamon.
