Each month, Mohonk bartenders compete to create a specialty craft cocktail for the resort. They are given one key ingredient, or theme, which must be featured in their seasonal creations. This month’s theme was “spring is in the air”! A select group of lucky Mohonk employees get to taste, discuss, and vote on the winning “Cocktail of the Month,” which can be enjoyed by guests in the Carriage Lounge among a variety of hyper-local draft beers and New York spirits.
Gin season is open. Welcome spring with this refreshing, herbaceous play on the Kentucky classic. Slap it!

2 oz Greenhook Gin
1 oz Lemon Juice
1 oz Honey Syrup
Muddle mint with gin and add honey and lemon juice. Shake and double strain into a rocks glass prepared with an absinthe rinse. Slap a mint leaf in your hands and place it on top.
