9:30 p.m. Ciao Bella! A Celebration of Italian Food and Drink We kick off the weekend with a toast to friends old and new featuring a delicious cocktail from mixologist Paul Sevigny. Salumi educator and expert Marco Mocellin will teach you how to build your own cheese and salumi board at home. We will conclude on a sweet note with a dessert that's easy to recreate at home! This will be an unforgettable Italian immersion experience.

2:30 p.m. Wines of Italy with Kevin Zraly* Renowned wine expert Kevin Zraly leads you on a tasting journey through Italy. You’ll taste 6 different wines as you learn about wine styles and developing your own taste, and discover details about acidity, tannin, oak, and fruit. Kevin leads the way, with stories, myths, and tantalizing tales of Italian wine.
4:00 p.m. Taste of Italy Reception and Book Signing with Kevin Zraly* After the wine tasting, join Kevin for a reception with a curated menu of Italian hors d’oeuvres by our Mohonk chefs. Additional authentic Italian foods will be provided by an iGourmet pop up shop, giving you the chance to bring home a delicious reminder of the weekend. This is also your chance to purchase a signed copy of Kevin’s bestselling wine book, Windows on the World Complete Wine Course.

9:00 p.m. Countertenor Jeffrey Mandelbaum Hailed as a “first-class countertenor” by The Washington Post, Jeffrey has performed in operas by Handel, Gluck, Mozart, and many others with companies around the world. He is a sought-after concert singer, specializing in the oratorios and passions of Handel and Bach, as well as Carmina Burana and Chichester Psalms. He will present selections spanning his repertoire with attention paid to the great operatic works of Italy.
Kevin Zraly will celebrate his 40th Anniversary in 2016 as the founder and teacher of the immensely popular Windows on the World Wine School, which has graduated over 30,000 students since its inception. Creator of the famous wine list at Windows on the World (which sold more wine than any restaurant in the World), he also designed the training program for the most knowledgeable wine-service staff in America. Kevin is the author of Kevin Zraly's Windows on the World Complete Wine Course, The Ultimate Wine Companion, Kevin Zraly's Wine Journal, and his Guide to American Wine. Jim Palmeri is Executive Chef at Mohonk Mountain House. Since arriving at Mohonk Mountain House in 2007, Chef Palmeri has created an outstanding culinary experience that embraces a farm-to-table philosophy, highlighting the bounty of the Hudson Valley region. The Wisconsin native graduated from the nationally acclaimed Culinary Institute of Kendall College in Chicago and has worked in resorts for most of his professional career. A good part of it was with Hyatt Regency properties in places such as Scottsdale, Arizona; Coral Gables, Florida; Las Vegas, and even the Cayman Islands. Palmeri also worked at the Four Seasons in big cities including Washington, D.C. and Chicago.
Marco Mocellin is a dedicated and passionate educator and trade member, who employs both traditional and innovative approaches to the market to further cultivate growth. Throughout his career, market trends and product education have been a primary focus. Harnessing common ground and celebrating the differences that exist in Italian and US culture when presenting/educating about Italian specialty and Salumi products have remained important guiding principles which have proven extremely fruitful over the course of his career. He regularly conducts trade and consumer seminars and has consulted for national retail chains on driving growth in the specialty meats category. He has been featured in news, print, and media outlets including Forbes Life, Rai International, and 1010WINS, among others. He is presently working on an Italian Salumi & Specialties Education book seasoned gingerly with life experiences gathered in Italy, abroad, and stateside.
Paul Sevigny Formerly behind the bar at the Florida Room in the iconic Delano Hotel in Miami Beach, Paul is currently the US Director of Brand Ambassadors for Disaronno International. With over 15 years of experience in the hospitality industry, Paul has consulted on beverage programs for high profile clients such as GHM Americas Hotel Group, Morgan’s Hotel Group, Table 8 Restaurant Group, Fontainebleau Miami, The Betsy Hotel, and OSI Restaurants, to name a few. His cocktails and expertise have been featured in such publications as Dujour Magazine, GQ, Miami Herald, Zagats, Travel and Leisure, Tasting Panel, Financial Times, and Bartender Magazine.
The Mohonk Culinary Team
The Mohonk Culinary Team has built a national reputation at food competitions around the country. Our team has won an impressive number of honors and awards at the international Food show in New York City. Eight entries received gold medals, along with two “Judges’ Best” awards. Mohonk chefs have also won numerous “Best of Show” prizes at local competitions.
Jeffrey Mandelbaum made his debut at the Metropolitan Opera in The Enchanted Island singing the role of Ferdinand in a series of performances alongside Joyce DiDonato and Plácido Domingo, under the baton of William Christie. He has been hailed as a "first-class countertenor" by the The Washington Post, and is fast becoming known for his powerful, elegant voice, and dynamic stage presence. Mr. Mandelbaum is a winner of the 2003 Metropolitan Opera National Council Auditions, New York Districts, and has sung numerous recitals in venues throughout NYC and Tuscany. He received a B.A. with Honors in Interdisciplinary Performance from Oberlin College, and a Master of Music degree in Historical Performance-Voice from the Mannes College of Music.
