Brussels Sprouts! Food Demonstration and Tasting with Ric Orlando
Join Ric Orlando as he demonstrates the preparation of this season’s splendid culinary treasure, brussels sprouts. Ric shares his insight, with a focus on high quality and taste, the benefits of a sustainable food system, regional food traditions, and a slower and more harmonious rhythm of life. Learn how to make, and savor the delicious tastes of this cabbage.
Dessert Demonstration with Mohonk’s Pastry Chef
Join our pastry chef, Audrey Billups as she shares her recipes for delicious desserts crafted from local ingredients.
Apples, the favorite fall fruit, make a delicious appearance at our afternoon tea. Savor hot apple cider and apple cider donuts from a local farm alongside traditional tea-time goodies.
BARNIVAL: It’s a Carnival at the Barn
Come out and enjoy an evening of fun with live music and entertainment. Select local vendors will offer free tastings and sales of food, drinks and crafts, and the Spa will offer 10-minute chair massages. The kids will enjoy popcorn and so much more!

MEET OUR PROGRAM LEADERS
“We want clean food!” Guided by these words, Ric Orlando brings an inspired blend of lust for life, outspoken passion for the flavors and ingredients of the world community, and nationally renowned cooking prowess to his roles as chef, lecturer, author, and media source. Well known as a Food Network “Chopped” champion and “Chopped” 50K Tournament Round 4 winner, Ric has also appeared on PBS as the host, creator, and writer of “Ric Orlando’s TV Kitchen.” As chef and owner of New World Home Cooking Café in Saugerties and New World Bistro Bar in Albany, Ric has been preparing and promoting both global and local food for over 20 years. His recipes and commentary are consistently in demand by the regional media. His tireless work in promoting the products, people, and beauty of the region has made him one of the Hudson Valley’s leading culinary spokespeople.
Mohonk Mountain House Pastry Chef
Audrey Billups is the Pastry Chef at Mohonk Mountain House and has more than 10 years of experience in baking and pastry operations. Before returning to Mohonk in January 2017, Billups served as the pastry chef at Topping Rose House in Bridgehampton, New York where she artfully prepared breads, breakfast pastries, desserts, ice cream, sorbets and mignardise for the seasonal restaurant. Prior to her role at Topping Rose House, Billups was the pastry sous chef at Ai Fiori, a one Michelin starred and New York Times three-star restaurant and Marea, a two Michelin starred and New York Times three-star restaurant, in New York City. Early in her career, Billups served as an assistant pastry chef at Mohonk Mountain House before moving to California to work as the pastry chef de partie at Addison at The Grand Del Mar in San Diego.
John Kirk & Trish Miller
Since 1988, John Kirk and Trish Miller have toured as a duo throughout the world, from the Grand Canyon to Barbados, from Carnegie Hall in New York to the Academy of Culture in St. Petersburg, Russia, playing music and singing in concerts, festivals, and schools, and calling contra and square dances. Many of their music selections are rooted in the local lore of the northeast woodlands. A love of traditional tunes and witty songs are presented with brilliant arrangements using fiddle, guitar, banjo, mandolin and warm clear vocals. Humorous, storytelling, original and poetic pieces make their shows delightful entertainment for all ages.
Walker Family Band
For over a decade The Walker Family Band has delighted audiences throughout the Southeast with a distinctive take on traditional styles. They perform Irish dance music and songs and American old time music with a forward reaching attitude. They especially enjoy sharing original tunes, which grow naturally from these basic roots and from their thorough training and experience in classical music and jazz. On stage The Walker Family Band creates a confluence of sound with an end game plan; a fresh connection with each audience.
With a master’s degree in fine arts, Carmen Doyon has been a creative force at Mohonk for over four years. Her design and execution of the Polar Night mural at the Skating Pavilion and this year’s dinosaur-themed children’s garden are popular focal points enjoyed by Mohonk guests and employees alike.
Carmen’s detailed woodcut prints require intricate skill with a carving knife, which she has expertly applied to pumpkin carving as well; Carmen has captured First Place three years in a row at Night of 100 Pumpkins in New Paltz. She is always looking for a new artistic challenge.
