MEET OUR PROGRAM LEADERS
Executive Chef at Mohonk Mountain House
Jim Palmeri has served as Executive Chef for Mohonk Mountain House for over 12 years, overseeing a culinary renaissance, including a complete transformation of all of the resort’s menus and a multimillion dollar kitchen renovation. He was featured in The New York Times’ article “Mohonk’s Farm-to-Table Rebirth,” highlighting his success at incorporating local produce and spirits into the offerings of a historic venue. He currently serves as the longest tenured Executive Chef in Mohonk’s history. Prior to his work at the Mountain House, Chef Palmeri served as Executive Chef for Hyatt resorts, including the critically acclaimed Vu restaurant (named by Esquire as one of the top 25 new restaurants in America), Japengo—a Zagat guide top Pacific Rim restaurant; and the Hyatt Regency Grand Cayman Resort, voted one of the best kitchens in the Carribean by Wine Spectator.
Yard Owl Craft Brewery
Seventeen years ago, James and Michelle Walsh combined their excitement for the restaurant business and opened Mudd Puddle Café in New Paltz, NY. Fresh roasted coffee, hand crafted food, and a warm community space has been the focus since day one. In 2012, they expanded their passion for fine crafted beverages and food by opening Yard Owl Brewery in Gardiner, NY. Here, the team comes together to brew and serve expressive Belgian inspired ales paired with house-made pickled vegetables and eggs, and beer mustards that are served with cheese, charcuterie, and pretzels. This venue has enabled them to create a second community space and expand their creativity into another area of the food and craft beverage world.
